How can I change the key or style of a song differently in a set or book?

When you import a song, that's the version that appears in your sets and books.  There's just one version of the song, and it is saved in your All Songs list.  Consider this the master version of the song.

If you want to change details like key, MIDI changes, sticky notes or drawings, etc. from this master version when you add that song to a specific book or set, you will need to use Separate Styles.  This is an option that you can turn on at the book or set level, or configure it to be on by default.

Books
When creating a new book, locate the Separate Styles option in the Book Editor.  This is set to Default which means it will use the default option you've set.  You can change from the default setting here by choosing On or Off.  You can also change this setting after the book is created by tapping on the Edit button in the Books Menu to enter Editing Mode and then tapping on the name of the book to display the Actions Menu.  You can then choose Edit Book.

You can change the default configuration by tapping on the gear icon in the Menubar to open the Utilities Menu and then choose Settings.  Next, choose Menu Settings on the left and then Songs on the right.  Locate the Books section and choose the state of Separate Styles there.  You can learn more about creating and using books in our Books Video Tutorial.
